Which food, when you eat it, instantly transports you to childhood?

Yema and Pastillas are two childhood treats that hold a special place in my heart. I fondly remember how one of my grade school classmates would sell them to the rest of the class for 15 to 25 cents each, depending on the size. As a child, I could never get enough of these sweet delights. However, my mom, being a dentist, did not approve of us kids indulging in such sugary treats too often.

Yema is a creamy, custard-like candy made from egg yolks, milk, and sugar. Here’s how you can make it at home:

Ingredients:

  • 6 egg yolks
  • 1 can (14 oz) condensed milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1/2 cup white sugar (for coating)

Instructions:

  1. In a non-stick pan, melt the butter over low heat.
  2. Add the condensed milk and vanilla extract, stirring continuously.
  3. Gradually add the egg yolks, making sure to stir constantly to prevent curdling.
  4. Continue to cook over low heat, stirring constantly, until the mixture thickens and begins to pull away from the sides of the pan (about 15-20 minutes).
  5. Allow the mixture to cool slightly, then shape into small balls or your desired shape.
  6. Roll the shaped yema in white sugar to coat.
  7. Let the yema cool completely before wrapping them individually in cellophane or wax paper.

Pastillas are another sweet treat made from milk and sugar. They are soft, creamy, and absolutely delightful. Here’s how to make them:

Ingredients:

  • 2 cups fresh or powdered milk
  • 1 can (14 oz) condensed milk
  • 1/2 cup granulated sugar (for coating)

Instructions:

  1. In a mixing bowl, combine the fresh or powdered milk and condensed milk until well blended.
  2. Transfer the mixture to a non-stick pan and cook over low heat, stirring constantly.
  3. Continue to cook until the mixture thickens and becomes a dough-like consistency (about 15-20 minutes).
  4. Remove from heat and let the mixture cool slightly.
  5. Once cool enough to handle, shape the mixture into small logs or cylindrical shapes.
  6. Roll each piece in granulated sugar to coat.
  7. Let the pastillas cool completely before wrapping them individually in cellophane or wax paper.
